My baby, spinach.
ReplyDeleteWe've been eating spinach omelettes, spinach quiche, spinach in tacos, spinach in smoothies, spinach in sandwiches, and sharing some, too. It's such a thrill to finally be making progress in the garden... the spinach is boosting my confidence, and immunity!

I think those are the largest, most healthy looking spinach leaves I've ever seen! Yum, yum.
ReplyDeleteIt keeps growing and growing and growing... so now I need to learn about ways to keep supplies for later. I am freezing a bunch of washed and chopped spinach. But I don't trust freezer bags, and plastic boxes fill the freezer so fast. Maybe I should just keep eating and sharing, and skip the saving part?
