William Bakes, and Sews

We still owe you a vegetarian meatball recipe. I'll get William on that as soon as possible. But first a word, or three, about William's egg bread. Challah. Three words: Beautiful. Delicious. Goodsmelling. (Is there a single word for "wow, this smells amazing?")

Egg bread is a fitting recipe for us, with hens giving us as many as ten eggs a day!

And just to complete the egg theme, we made egg salad sandwiches.
(Is there a single word for "wow, this tastes amazing?")

Also, William made his bow tie. Yeah, he's amazing.

I have a recipe to share. Your Aunt Liz inspired me with her fabulous quinoa side dish, which I recreated with my variations. I wanted to create another quinoa variation and came up with the following delicious concoction: I call it "Snappy Coconut Cashew Quinoa" and it is delicious hot or cold.
Ingredients: Chicken or Veggie stock for quinoa, Mrs Dash, Extra Virgin Coconut Oil, Trader Joe's Roasted Coconut Flakes, Sugar Snap Pea Pods - strings removed, Cashews
1. Cook the quinoa according to pkg. instructions. If you buy it in bulk, it's a ½ (quinoa) to 1 (boiling water) ratio, just like rice. I use Knorr Suisa chicken broth and a lot of Mrs Dash. I go by taste more than what the labels say.
2. When quinoa is cooked and still very hot, add coconut oil. I made a ½ c portion of quinoa and I used + - 2 Tablespoons. Mix it in. Add coconut flakes to your taste. Add cashews that have been chopped in ½. Lastly add sugar snap peas that have been deveined and cut into ⅓'s or ¼ 's according to the size of the pod. Adding the pods last ensures that they still stay crispy.
3. Mix well and enjoy or chill and eat later.

Love his duds. Very Springtime! That bread looks delicious. I hear good things about challah bread pudding & french toast, but it looks too good for there to be leftovers.

Beautiful challah William! I make a version that has a lot of honey in it to sweeten it. It's fantastic also for making french toast.
